1 Large Eggplant
1/2 Yellow Squash
1/2 Zucchini
1-2 Green Pepper Slices
1/2 Spanish Onion
1 Garlic Peeled & Chopped (if minced 2 tbsp)
1-2 Red Pepper Slice
Tofu Shirataki Fettuccini Pasta
2 tbsp Extra Virgin Olive Oil
1 tsp Black Pepper
2 tsp Himalayan Pink Salt
1. Pour Olive Oil into a Large Pan, Med Flame
2. Add Onion, Garlic, Red Pepper, Green Pepper, Yellow Squash, Eggplant, Zucchini to Pan
3. Sprinkle Salt, Pepper over Vegetables & Stir frequently until Tender
4. Bring 2 cups of Water to a Boil in a Pot
5. Add Pasta to Boiling Water, Cook for 2-3 Min
6. Place Cooked Pasta in a Bowl
7. Top Pasta with Veggies
