Slice Red Pepper & Dice

Clean & Cut Kale

Cut Open Avocado & Dice

Ingredients

1 Med Size Eggplant

1/2 Spanish Onion

2 Kale Leaves

2 Slices or Rings of Green Pepper (2" dia, 1/4" thick)

1 Slice or Ring of Red Pepper (2" dia, 1/4" thick) 

3 Sun-Dried Tomatoes Slices

1/2 Haas Avocado

1 tbsp Minced Garlic

1-2 tbsp Extra Virgin Olive Oil

1 tsp Himalayan Sea Salt

Directions

1. On MED Flame Place: Olive Oil, Garlic ,Onion, Sun-dried Tomatoes, Green & Red Peppers in Large Pan 

2. Cook for 3 Min (stir frequently) 

3. Lower the Flame to LO/MED Setting

4. Add in Eggplant, Kale, Sprinkle with Salt, Partially Cover with Lid

5. Cook for 12 Min (stir frequently until tender)

6. Remove from Stove add in Diced Avocado

Notes

Cooking time may vary based on how tender you like your Veggies.
