Clean/Rinse/Pat Dry Spinach + Tomatoes
Cut Tomatoes in halves
Chop Onions
Whisk Egg Whites

1 Cauliflower Tortilla
2 Egg Whites
1 cup Spinach
1/4 cup Red Onions
1 tbsp Extra Virgin Olive Oil
4 Cherry Tomatoes
1 tbsp Cayenne Pepper
1 tbsp Crushed Red Pepper
1/4 cup Shredded Cheddar Cheese
1. On Low-Medium Heat add 1/2 tbsp Olive Oil to Pan and Brown both sides of the Tortilla
2. Quickly remove Tortilla & Cover to Keep Warm
3. On Medium Heat, add 1/2 tbsp Olive Oil to pan + Onions and sautee until tender
4. Immediately add in Spinach, Egg Whites, Cayenne Pepper
5. Stir until Egg Whites have fully Cooked & Spinach is Tender
6. Reduce to Low Heat then add Tomatoes stir until they are warm
7. Remove everything from Pan & place onto the Tortilla
8. Sprinkle Cheddar Cheese + Crushed Red Pepper
